PINEAPPLE VANILLA BEAN MARTINI

INGREDIENTS

MARTINI

  • 1 cup pineapple juice
  • 1/4 cup lemon juice
  • 2 ounces coconut rum
  • 2 ounces pinepple rum
  • 2 and 1/2 ounces St. Germain
  • 3/4 ounce vanilla bean simple syrup

VANILLA SIMPLE SYRUP

  • 1/2 cup water
  • 1/2 cup sugar
  • 1 vanilla bean

DIRECTIONS


  1. To make the simple syrup, add water and sugar to a small saucepan. Cut the vanilla bean lengthwise down the middle. Run your knife down the length of the vanilla bean to remove the seeds. Add the seeds and bean pod to the saucepan. Bring the mixture to a gentle boil. Turn down the heat and simmer for 5 minutes. Remove from the heat and allow the syrup to come to room temperature. Transfer to a mason jar and refrigerate for up to 3 months.
  2. Place all of the ingredients in a pitcher. Stir to combine.
  3. Fill a cocktail shaker with ice. Add the martini mixture and give the shaker several vigorous shakes. Transfer to a highball glass filled with ice. Garnish with a pineapple wedge and sprig of mint.
