Artichoke Appetizer

Ingredients 4 each eggs, beaten 2 pound cheddar cheese, grated 12 oz marinated artichokes, jars, cut-up 1 salt, to taste 1 pepper, to taste 1 tabasco, dash to taste 3 each green onions, chopped fine 6 each soda crackers, crushed 1 each clove garlic, crushed
Directions:Saute onions and garlic in artichoke oil; then drain. Mix all
ingredients and spread in greased 8×8 inch pan. Bake at 325 for 30 min.
Can be baked, frozen and re-heated. This recipe was a great success
at a party Christmas Eve.

Baked Caramel Corn

1 c Butter
2 c Brown Sugar
1/2 c Cornsyrup
1 ts Salt
1/2 ts Baking Soda
1 ts Vanilla
6 qt Popped Popcorn
Melt butter; stir in brown sugar, cornsyrup and salt. Bring to a boil, stirring constantly, than boil,without stirring for 5 minutes. Remove from heat, stir in soda and vanilla. Gradually pour over corn, mix well. Turn into two large, shallow baking pans. Bake at 250 degrees F for 1 hour, stir every 15 minutes. Remove from oven, cool completly. Baked Cheddar Olives

1 c Cheddar cheese, grated
2 tb Unsalted butter, softened
1/2 c Flour
1/8 ts Cayenne pepper
24 Pimiento-stuffed olives (a 3
-oz. jar) Drain olives and pat dry with towels. Combine cheese and butter in a bowl. Add flour and cayenne and blend until well mixed. Drop the dough by Tablespoons onto wax paper and wrap or mold each piece of dough around an olive, covering it completely. Bake the wrapped olives on a baking sheet in the middle of a preheated 400f oven for 15 minutes or until golden. Serve warm. Makes 24 olives.

BAKED CLAMS

Ingredients 12 each cherrystone clams 2 teaspoon butter or margarine 1/4 cup finely chopped onion 1 each clove garlic, peeled and crushed 1 each egg, slightly beaten 1/4 cup bread crumbs, seasoned 1/8 teaspoon oregano leaves, dried 1/3 cup bread crumbs, seasoned 2 teaspoon butter, or margarine, melted
Directions:Remove clams from half shell and chop coarsely. Set clams and shells
aside.
In a medium-sized, heat-resistant, non-metallic mixing bowl place 2
tablespoons butter. Heat in Microwave Oven 30 seconds or until melted.
Add onion and garlic. Heat, uncovered, in Microwave Oven 3 energy 3
minutes or until onion is tender. Add egg, the 1/4 cup bread crumbs,
chopped
clams and oregano to onion mixture.
Spoon mixture into reserved shells. Place shells on a heat- resistant,
non-metallic serving platter.
In a small bowl combine the 1/3 cup seasoned bread crumbs and the 2
tablespoons melted butter. Sprinkle buttered bread crumbs on top of clam
mixture.
Heat, uncovered, in Microwave Oven 5 minutes or until heated through.
