Beef-Pot Roast Tex-Mex Style

-JUDI M. PHELPS 4 To 5 lb beef bottom roast;
-boneless, trimmed of fat 2 tb Worcestershire sauce
2 tb Lime or lemon juice
1 tb Prepared mustard
2 Cloves garlic; minced
6 oz Can spicy tomato juice
1/2 c Chili sauce
1 To 2 jalapeno peppers;
-finely chopped 2 tb Fresh cilantro or parsley;
-finely chopped 2 ts Cumin seeds
Put meat in shallow plastic dish just large enough to hold it. Combine Worcestershire, lime or lemon juice, mustard, garlic. Spread mixture over meat. Cover and refrigerate overnight. Roast meat in preheated 325 degree oven for 1 hour. Combine remaining ingredients; pour over meat. Cover and roast 3 to 4 hours more at 275 degrees until meat is very tender. Baste occasionally with pan juices (thin with a little boiling water if necessary) Slice thinly to serve. Makes about 6 to 8 servings. Approximately 200 calories per 3-1/2 oz. serving. Coffee Pecan Muffins

1 3/4 c All-purpose flour
1/2 c Dk.brown sugar,firmly packed
1 tb Baking powder
1/4 ts Salt
3/4 c Milk
2 tb Instant coffee
1 ts Vanilla extract
1/2 c Unsalted butter, melted
1 lg Egg, lightly beaten
1 c Pecans, chopped
Preheat oven to 400 F. Grease 8 lg. muffin cups. In a large bowl, stir together flour, sugar, baking powder, and salt. In a medium-sized bowl, combine milk, instant coffee powder, vanilla extract, butter, and egg. Let stand for 5 minutes. Add mixture to flour mixture and mix “lightly”. Fold in pecans. Spoon batter evenly into prepared muffin cups. Bake 20 minutes, or until a cake tester comes out clean. Remove muffin tin to wire rack. Cool 5 minutes before removing muffins from cups, finish cooling on rack. From the recipe files of suzy@bestweb.net —–

Goldy’s Red ‘N’ Whites

1 c Unsalted butter; softened
3 oz Cream cheese; softened
1/2 c Sugar
1 ts Vanilla extract
2 c All-purpose flour
36 sm Strawberries; hulled and
-halved Recipe by: Diane Mott Davidson. The Cereal Murders Set over to 350F. (Ungreased cookie sheets) In mixing bowl, beat the butter with cream cheese until well blended. Beat in the sugar and vanilla, then stir in the flour until well mixed. Using a 1/2-tablespoon measure, shape the mixture into small balls and place 2 inches apart on ungreased cookie sheets. Make a small indentation in the top of each cookie with your thumb. Carefully place a strawberry half, cut side down, in each indentation. Bake for 12 to 18 minutes, or until very lightly browned. Cool on racks. NOTES : A Goldy Bear mystery set in Aspen, Colorado. 5 dozen vanilla cheese cookies with a strawberry center (thumbprint)
